Julie Hudry holds a PhD in neurosciences from Claude Bernard University in Lyon (France) and completed a post-doctoral degree at McGill University in the Montréal Neurological Institute (Canada). She joined the Nestlé Research Center in 2004.

Olivier Lepiller is the author of a thesis on criticism levelled against industrial food in France (late 1960-2010), a study of the origins, circulation and effects of such criticism, and of how food producers reacted. He is a researcher at the Cirad (Centre de coopération internationale en recherche agronomique pour le développement), UMR MOISA (Unité mixte de recherche Marchés, organisations, institutions et stratégies d'acteurs), focusing on eating habits in an urban environment, nutrition transition and the sustainability of innovations with regard to food, mainly in Africa, Asia and South America.
Chrystel Loret studied food science in France. While based at Unilever Research in the UK, she went on to earn a PhD in chemical engineering from the University of Birmingham. In 2007 she joined the Nestlé Research Center.
